MOUNT CARMEL: is a coastal mountain range in the Northern part of Israel. The Hebrew name for this place is Har ha Karmell meaning “God’s Vineyard”. View from Carmel Mountains; Hikers on Mt. Carmel   

CARMELITE ORDER: A Roman Catholic religious order, originally of men, founded in the 12th century on Mount Carmel in the Holy Land. Today, there are Carmelite Orders for both men and women. Carmelite Sisters of the Divine Heart of Jesus; Official Website Order of Carmelite Brothers   

ST. SIMON STOCK: St. Simon Stock was an Englishman in the 13th century and Prior General in an order known as the Carmelites. According to tradition, Mary appeared to St. Simon giving him what is known as the brown scapular. Saint of the Month     

SARACEN: Term used in the Middle Ages for any person who professed the religion of Islam regardless of country they came from.
